Verse of the day: how to actually make it a daily habit

The problem usually isn't discipline. It's that reading a verse asks nothing of you, so nothing about you changes, so there is no reason to come back.

Attach it to something you already do

New habits survive when they ride on old ones. Do not decide to read a verse 'in the morning.' Decide to read it while the coffee brews, or before you unlock your work email, or the moment you sit down in the car.
